This einkorn puff pancake is easy to make, delicious, and can be topped with so many different ingredients to create a different dish each time you eat it. This is a staple in our home once homeschooling starts as I can just throw everything in a blender, pour it into the hot cast iron, and get on with our lessons. This was one of the first recipes my 8 year old son could make on his own so I encourage you to get your kiddos involved with this one!

The Benefits of Einkorn Flour
Some of you may be new to einkorn flour so I wanted to quickly go over the benefits!
- High in protein, iron, phosphorous, and thiamine to name a few
- Contains 213% more lutein, 55% more riboflavin, 76% more manganese, and 20% more fiber than regular wheat
- Considered the original wheat since it has not been modernized/hybridized, and because if this many who can’t tolerate regular wheat or gluten do just fine with einkorn
- Nutrient dense (and literally more dense) which triggers leptin and helps us to feel satiated quicker because our bodies recognize the unadulterated gluten within einkorn
- Contains 50% less phytic acid, which is one of the reasons it is easier on our digestive tract and also our metabolism as a whole since phytic acid is what binds up minerals
As you can see, einkorn is so much better for your overall well being that regular wheat! You can make it even more nutrient dense by purchasing einkorn berries and milling them yourself OR creating a sourdough starter with einkorn flour. How To Make Einkorn Puff Pancake
Like I said earlier, this recipe really couldn’t get much easier!
- Preheat your oven to 425 and place your 12″ cast iron skillet (or 9×13 glass dish) into the oven to preheat
- Melt a stick of butter in a saucepan and allow to cool for a few mins while you add the other ingredients into the blender
- To your blender, add in milk, eggs, sugar, salt, vanilla, and einkorn flour & give it a good blend
- Then add in your butter and blend so it doesn’t cook the eggs
- Pull the cast iron out of the oven once it hits 425 and add a few pats of butter around the pan
- Pour your batter into the skillet evenly & place back into the oven
- Bake for about 20 minutes or until puffy and golden around the edges
What Should I Eat Them With?
Here are a few of the toppings we have eating with our Einkorn Puff Pancake
Berry Compote
- Add 1 cup frozen wild blueberries & 1 tbsp cane sugar to your used butter saucepan and cook covered over medium heat for 5-10 minutes until blueberries are tender and there is juice to spoon over your puff pancake
Muddled Strawberries
- Add 1 cup fresh strawberries & 1 tbsp cane sugar to your used butter saucepan and cook over medium heat (smashing while cooking) for 5-10 minutes until strawberries are tender and there is juice to spoon over your puff pancake
Maple Syrup
Corn-free Powdered Sugar
To make this even more filling, you can serve it alongside some fresh fruit and yogurt or with a side of breakfast sausage.
Einkorn Puff Pancake
Equipment
- 12" Cast Iron Skillet Can also use a glass 9×13 glass dish
- Blender Can also use a handheld mixer
Ingredients
- 1.5 cups All Purpose Einkorn Flour
- 7 eggs
- 1 cup milk
- 1 tbsp cane sugar
- 1 stick butter, melted (plus a few pats for the pan)
- 1/4 tsp salt
- 1 tsp vanilla extract
Instructions
- Preheat oven to 425 and place your 12 inch cast iron skillet into the oven to preheat
- Melt stick of butter in a saucepan and allow to cool for a few mins while adding other ingredients into the blender
- In a blender- add in milk, eggs, sugar, salt, vanilla, and einkorn flour & blend
- Next add in the butter and blend so that the hot butter doesn't cook the eggs
- Pull the cast iron out of the oven and add a few pats of butter around the pan
- Pour the batter into the skillet evenly & placeback into the oven
- Bake for about 20 minutes or until it is puffy and golden around the edges. Serve by itself or top with one of the choices in the blog post!
